By coincidence, we had a version of Susan's Mushroom Sarnie for lunch. I make it like this: Soften a finely chopped onion of a frying pan.Add sliced mushrooms - a mixture of varieties, about half a kilo.When softened, add a glass of white wine, salt, black pepper, a mixture of herbs and simmer to reduce.Add a glass of cream, simmer to reduce to a sauce-like consistencyAdd a knob of butter and stir in chopped blue cheese, 100g approx. Serve on toasted bread and wash down with the rest of that bottle of wine. Paddy
