what is the name of this plant?

Looks like a Helichrysum or an Eriogonum Neither of which I'd expect to see in China, if that is where the film was taken. :-X :-\
If around the Mediterranean, then perhaps it is a form of Helichrysum italicum.

There are some Teucrium which are endemic to Turkey. If the firt plant is Teucrium polinum then that is not a Turkish endemic.
This second plant is not Narrow-Leaved Vervain, Verbena simplex.
It is in the Lamiaceae family - seems to have a stem that is square in section.

Stachys sieboldii is a cultivated plant, it seems unlikely that you find it in a forest. Your video is not very precise on some details which would be useful to identify the species (hair on the lips, shape of the calice...). It will be difficult at least for me to be more precise on the species, unless there's a specialist of the turkish flora on the forum. In this paper https://dergipark.org.tr/download/article-file/122299 (https://dergipark.org.tr/download/article-file/122299) , they say that you can encounter 90 species of Stachys in Turkey and 23 of section Eriostomum (your species seems to belong to this subpart of the genus).
Maybe can you use links or contacts on this site https://www.turkiyebitkileri.com/tr/ (https://www.turkiyebitkileri.com/tr/) or an other site about turkish flora ?

It's an Echium, but I'm not sure what species you have growing wild in Turkey... Maybe Echium italicum?
